There is a place in Nova Scotia where the soil, the forest, the vine, and the table all tell the same story and for one unforgettable afternoon, you get to hear it. Gifts from the Valley is a new regenerative tourism experience from Earth Rhythms that carries you from a family farm overlooking the Bay of Fundy, into a 150‑year‑old hemlock forest, through an award‑winning regenerative vineyard, and finally to a secret Gaspereau Valley table set with a feast grown minutes away. This is not a tour. It is an invitation to become, for one day, part of the Valley’s story.

Highlights:

  • A masterstorytelling host, not a guide. Celes Davar, an award-winning regenerative-tourism guide and facilitator, doesn’t simply narrate the day — he weaves farm, forest, winery, and dinner into one continuous story of place, identity, and renewal, so every stop deepens the last, connecting people and place. He is your guide and host to travel to four very special community places, where your emotions will be tugged and your awareness of the connectedness of climate, place, community, and local relationships will be part of the story you take home.
  • Meet the people regenerating the land. At Longspell Point Farm, organic farmer Jeff McMahon and his wife Paula share 25 years of choosing to work with nature instead of fighting it. You will taste and harvest greens, and send you home with your own bag of just-picked greens for your own family salad when you return home.
  • Walk inside a living, breathing old-growth forest. A conserved Wabanaki forest of giant hemlocks and white pines, as old as Canada itself, offers a full sensory reset. Where the scent of balsam fir, the sound of a forest creek, and a guided moment of stillness offers you a travel experience few ever attempt, in Ksu’skue’kati (Place of the hemlocks, sacred to the Mi’kmaq) high on West Brooklyn Mountain, in the Gaspereau Valley.
  • Taste biodiversity in the glass. Benjamin Bridge, an award-winning winery, in the Gaspereau Valley pairs a personalized tasting with a hands-on walk into the biodiverse regenerative viticulture behind every bottle — proof that world-class wine and environmental stewardship are the same pursuit. "Your hands will touch the ancient soil that's been rebuilt over a decade; then, you’ll taste a glass of what that soil made. One of only two B Corp certified wineries in Canada, but that's not the part you'll remember. The part you'll remember is the moment the wine makes sense.”
  • Dine on a story you can taste. Chef Ayzhia of Basin & Bloom Cookery — a self-described “mealweaver” — turns the day’s farm, forest, and winery ingredients into a communal dinner inside a hidden Gaspereau Valley Speakeasy. “"You'll arrive as a stranger. By the time the plates come out at a table and location you'd probably not know about, someone will be topping up your glass and asking about the garden back home."  Take home recipes and ideas for your own regenerative table menus.

This experience includes guided travel in the Wolfville area, Canning, and the Gaspereau Valley (~55km for the day). Exact meeting location will be provided upon booking.

Spaces are intentionally limited to keep every scheduled group program personal.

Six or fewer travellers are $325 per person. These scheduled group programs are available only on a specific dates, in which all four hosts are able to collaborate. Please check the dates for availability.

Custom group requests can be booked in advance (minimum of 4 weeks) at a special price of $295/guest for 7 to 12 people.

Celes Davar

Celes is an Experiential Tourism operator, coach and facilitator of Canadian community-based experiences that integrate food, nature, art, culture and wellness. His background and training as a biologist, climate change advocate, and Experiential Tourism facilitator is at the intersection of his customized, small group, slow travel experiences for people wanting to immerse themselves into hands-on encounters. Celes has been coaching and facilitating community organizations and businesses in multiple jurisdictions in six provinces over the past 18 years to build capacity around experiential and sustainable tourism. At the foundation of this coaching and experience development process is education and innovation in practices that are regenerative, giving back to the community, and storytelling that reflects community values. Celes has been involved in making multiple presentations to local, regional and national audiences about the FoodArtNature project, and how it demonstrates a new and relevant approach to delivering regenerative visitor experiences. Celes is the winner of 2025 IMPACT National Award for Leadership in Community Based Sustainable Tourism.
